With the summer in full swing now many people are heading out on vacation. But there are some who are not. Americans take the fewest vacation of any other country. The average time away, according to Psychology Today is just 3-4 days. One in seven Americans will take no vacation at all. Add to this the pervasive nature of work due to electronic connections and you have a recipe for stressful living.

One of the great things about summer, especially for us in the Midwest is the wonderful array of fresh fruits and vegetables at our disposal. There is nothing more beautiful to me than a fruit salad with a mix of melons and berries-the colors are amazing and the sweet flavor unsurpassed. And how about a fresh picked tomato?
